On New Year's Eve, write resolutions for the coming year and tuck them inside the Christmas socks before putting them away. Read them for the next year's Christmas Eve.

Bruschetta


8 Roma tomatoes1/3 cup chopped fresh basil1/4 cup shredded Parmesan cheese2 cloves garlic, minced1 tablespoon balsamic vinegar1 teaspoon olive oil1/4 teaspoon kosher salt1/4 teaspoon freshly ground black pepper1 loaf of French bread, toasted or sliced


In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic.  Mix in the balsamic vinegar, olive oil, kosher salt, and pepper.  Serve on toasted bread slices.

Sparkling Gelatin Squares

4 1/4 oz packets unflavored gelatin
2 C. cold water
1 1/4 C. sweetener
2 1/4 C sparkling grape juice
1 C. club soda

Boil 1 1/2 cups water
In the meantime, in a mixing bowl, sprinkle the packets of gelatin over the remaining 1/2 c. cold water.  Let stand a minute.
Add the 1 1/2 c. boiling water to the mixture stirring constantly until granules are dissolved.
Add sweetener to a separate mixing bowl, and pour gelatin mixture over the top.  Stir the mixture well until sweetener dissolves.
Let cool until no longer hot, then stir in sparkling grape juice and club soda.
Pour mixture into a baking dish.  Cover and chill in refrigerator for three hours until set.
Cut into bite sized squares.
